I just remembered that my brother asked me to bake some food, as one of his friend's is going to be staying over the weekend. We, as Jews, have this elaborate meal on Friday night and Saturday, supposed to honor the sanctity of the day (kedushat hayom) and make us enjoy it (oneg).
Needless to say, I have only a few hours left until night comes. I would greatly appreciate some ideas for simple things to make. We already have some basics, like chicken and so forth, but the more the better and the merrier.

What do you have in the house? Do you have any of the following: rice, pasta (if so, what kind), frozen/canned veggies, pureed veggies/fruit (baby food works really well for what I have in mind), celery, nuts, barley, cucumbers?

We have cucumbers, rice, pasta, nuts, spageghtii, and the shell type of pasta, lasangna, too, we have peas and maybe a little more canned veggies, no barley (that I know of!), no celery.

If you have extra chicken, chicken salad is easy. Dice the chicken, add diced nuts (walnuts are best), and something else for flavor and crunch. I like celery, but fresh (or frozen) broccoli works well, and so do diced apples. Toss it all with a creamy salad dressing (non-dairy, of course), or some mayo with a little garlic and onion powders.
Cucumber salad is quick too. Slice cucumbers thinly (food processor or a mandolin slicer work best, but a sharp knife and a steady hand can do the trick. Peel one onion (red is best, but white or yellow is fine) and slice thinly; add to cucumber. In a separate bowl, combine 1/2 c. vinegar (white, cider, whatever) with pepper (white is best, but black is ok) and a touch of garlic. Add 1/4 c. sugar and 1 c. water. Mix well, and combine with veggies. Allow to marinate 3 hours or overnight. (Use a plastic or glass container! Vinegar + metal = bad)
Shell pasta + some type of veggies (such as diced fresh carrots or diced caned tomatoes) + a little vinegar + a little oil + a little pepper makes a nice pasta salad.
Too bad you don't have baby food. I make a really nice almost-instant kugel with that.

Peel a couple of ordinary cucumbers. Slice them very thin. Add some red wine vinegar and a bit of canola oil. Add some chopped fresh dill. You can either eat these right away or put them in the fridge -- they'll keep for at least a few days.
Avocado Salad:
Dice a few ripe avocados (figure one per person). Chop finely a small amount of red onion (a whole onion is enough for six avocados); or you can use scallions instead. Dice some bell peppers -- I like red or yellow -- about half of one per avocado. Open and rinse a can of black beans (chickpeas will do in a pinch), or two cans if you have more than four people. Mix everything together and season with lemon juice and salt. You can sprinkle cheese on top, if this is for a milchig meal. This dish will keep a couple of days in the fridge.
Peanut Butter Cookies:
1 cup peanut butter 1 cup sugar 1 egg 1 teaspoon vanilla extract Combine the above until well mixed. Preheat oven to 350. Grease a cookie sheet. Roll dough into 1" balls and place them on the sheet. Use a fork to gently flatten each ball -- these will expand only a little as you bake them. Bake 12-15 minutes. It is not a mistake that there's no flour in this recipe. I do a variation with almond butter for Pesach.

Oh, if you have canned tuna, mix that with cooked shells or penne or other pasta while it's still hot, and some frozen peas; dress with olive oil and vinegar and salt and pepper for a nice pasta-tuna salad.
