Basically at my ankle(s) (both but more noticeable on one then the other) basically my leg muscle tissue is "normal" down until a point then disappears for an inch where all I can feel is my bone and then "reappears" as muscle tissue again for the rest of my ankle to my foot, leaving basically a creepily feeling "gap" of muscle tissue on my lower leg where all there is is bone.

I recommend anatomy and physiology classes. Not only may you find this is normal (I don't really know quite what you're getting at, but it probably is) but you'd then know the exact names to tell us what you're trying to describe.

Besides looking strange to you, do you have any other problems? Pain or weakness, for instance?
If not, I wouldn't worry about it. There is a range of normal anatomy, and if everything is functional, that may just be the way you're built.
