I have a 1and1 webmail account. I have my suspicions about their server. How do I forward email to my hotmail account?

You mean you want mail forwarded from your 1and1 account to your Hotmail account?

Yeah, just setup a .forward file in your shell account.

Which one is considered my shell account(I imagine that the 1and1 account is), and how do I set up that file?

Are you paying for the 1and1 hosting service, Irami, and thus have access to their web-based control panel application? There's a forwarding option built right into their email control.

What are your suspicions? If you think that they are reading your mail, this will not help since it will still pass through their server first. If mail gets lost, it will still get lost in passing through their server.

More likely suspicions that 1&1's spam&malware filters aren't up to email-industry standards.
Or collecting personal info and passing it along to advertisers.
