Hey, I was just considering doing a thread about this. What's a good rice pudding recipe? My mom makes it really quick and easy by just adding coconut milk and a bit of sugar to already-cooked rice. I tried it once and it turned out great until I put it in the fridge. Then the rice soaked up all the milk and it got all nasty. [Frown]

I mix the already cooked rice with some milk, eggs, cinnamon, honey, vanilla and raisins and bake until set.

My mom does it on the stove with quick-cooking or regular long-grain rice (the latter takes more time) and milk and some sugar and raisins and a cinnamon stick and sometimes some nutmeg. It's really more arroz con leche than traditional American rice pudding, but we always loved it. [Smile]
